Welcome, Ludovic:

It's glad you love Taiwan.

If you need a Linux Distribution for deal with chinese, I suggest you have a
view of "EzGo7".
It's distributed by OSSAC( MOE Support), and it collects some usefull tools.

I always use "gcin" chinese input system, and EzGo7 use it, too.

You can download it from http://ossacc.moe.edu.tw/download/ezgo7.iso
Just only one thing I feel bad -- big ISO file( 2.5GB )

If you don't like so big distriution, you can download Ubuntu distribution
and install gcin Inupt System. Good luck!
